About Daphne and Subarz
After practicing law for many years, I came to the realization that it was time to follow my dreams and passion and open a bakery. I knew that I wanted to create something unique, something tasty and something sweet. After thinking (and over-thinking) this idea for several years, and being encouraged and nudged by my friends and family, I finally had the courage to take the next step, and Subarz was launched.
Growing up, I always loved to bake and watch my mother in the kitchen. Once I had a family of my own, the kitchen became a communal place in our home, not only for my husband and daughters, but for our friends and family. When guests would come to visit, they would almost always find me in the kitchen and that soon became the place where everyone gathered, tasting whatever it was that I was preparing. My husband would joke that I would never serve the same dish twice, because I had a knack of not following recipes and making things up while I went along. I tried to explain that this was an extension of my creativity and that one day I would discover the perfect combination of ingredients to create a new item.
While my children were little I would experiment and adapt recipes to appeal to their various taste preferences, as well as their various dietary restrictions and allergies. Through those experiments I developed a recipe for mandelbread which soon became a favorite among our friends and family. After perfecting that recipe, I knew it was time to create something unique, combining the flavor and texture of my mandelbread with the ease and popularity of a cookie or a bar. After spending hours in the kitchen and through trial and error with various ingredients and shapes, Subarz were created and were an instant hit.
